Mississippi Mud Cake
Ingredients:
4 eggs
2 cups sugar
3 Tbsp. cocoa
1 cup butter
1 1/2 cups coconut
1 1/2 cups flour
1 tsp. baking powder
1 tsp. vanilla
1 cup nuts
1 - 7 oz. jar marshmallow cream

Cream eggs, sugar, butter and vanilla. Gradually add flour, cocoa and baking powder. Beat until blended. Stir in coconut and nuts. Pour in a greased 9 x 13 pan. Bake at 350 degrees for 35 to 40 minutes. Cool slightly (5 minutes). Spread marshmallow cream over cake. Cool completely. Frost.

Frosting:
1/4 cup butter, 1/3 cup cocoa, 3 3/4 cups powdered sugar, 1/3 cup evaporated milk, 1 tsp. vanilla. Mix powdered sugar and cocoa. Add softened butter, milk and vanilla. Stir until smooth and spread on cake.
